In the evenings, when you come home and want to eat dinner which is healthy, fast and easy to prepare and cook, you often come up against the limits of your own cooking skills. In addition, it should be a light dinner, you do not want to feel stuffed afterwards. Quite a lot of points that should be considered. All this can be combined with the recipe salmon with pesto.
A light dinner

Salmon with Pesto, Quinoa and Vegetables
- salmon (circa 250 grams per person)
- basil pesto
- cherry tomatoes
- green beans
- olive oil
- vegetables of choice (carrots, zucchini, pepper)
Preheat the oven to 200 degrees bottom and top heat. Take a baking sheet and lay out two strips of aluminum foil on it. You need one strip per salmon fillet. Place a handful of frozen green beans on top of the strips. Then you place the salmon fillet onto them. Spread a good layer of basil pesto over it. Then drip a few drops of lemon and place halved cherry tomatoes. Now fold the aluminum foil together so that the salmon is completely enclosed by the foil.
Now the salmon comes in the oven for about 35-40 minutes. Meanwhile you can fry an onion and cut the vegetables. When the onions are browned in oil, the vegetables follow. After a short roasting, deglaze with a little water so that all the vegetables are covered with water. This may now simmer for about 10-15 minutes. Meanwhile, wash the quinoa and cook it according to the packing instructions. Each quinoa kind needs different lengths but about 15-20 min. When the vegetables are done, leave it in the pan for a while and then add the quinoa. Mix both well.
Once the salmon is fried, can be served.
