1. Lunch recipe: Vanessa’s avocado bread (with shrimps)

A hearty and flavorful combination

Ingredients:

  • Shrimps
  • Avocado
  • Lemon
  • Yoghurt
  • Olive oil
  • Bread
  • Salt & Pepper

Time needed: 5 – 10 minutes

This creamy and filling lunch is packed with healthy fats from the avocado, protein from the shrimp and fibre from the bread. To make the avocado cream, simply blend the avocado, lemon juice, yoghurt and olive oil with a fork until smooth. Season it with salt and pepper. This step can be done ahead of time, so when it’s time for lunch, the meal is super quick to put together. Fry the shrimps in a pan until they are done. This usually doesn’t take longer than 5-10 minutes depending on your stovetop. Spread the cream on slices of your favorite bread and top with the fried prawns. This meal is filling enough to get you through the afternoon and delicious enough to look forward to every day.

2. Lunch recipe: Vanessa’s bulgur vegetable salad

A fresh and nutritious option

Ingredients:

  • Bulgur or couscous
  • Vegetabable of your preference
  • Olive oil
  • Vinegar
  • Salt & Pepper

Time needed: 25 minutes

Full of vitamins, minerals and fibre from the fresh vegetables, this light and refreshing salad is a great option for a summer lunch. Cook the bulgur according to the instructions on the packet. During this cut all your vegetable and let it fry in a pan. Cover with some water to speed up cooking time. When the bulgur and vegetable is ready, mix it all together. I prefer vegetables such as tomatoes, red pepper and sugar snaps and zucchini. Dress with olive oil and vinegar and season with salt and pepper. Let it sit over night or enjoy right away. This salad is easy to pack for work and can be eaten cold or at room temperature, making it a convenient option for those with busy schedules.

3. Lunch idea: Vanessa’s tortilla wrap with lettuce, carrots and cream cheese

A simple and satisfying wrap

Ingredients:

  • Tortilla wrap
  • Lettuce
  • Cream Cheese
  • Carrots
  • Tomatoes
  • Salt & Pepper

Time needed: 5 minutes

This wrap is a great option for a quick and easy lunch. Simply spread cream cheese on a wholemeal tortilla and top with lettuce, tomatoes and carrots. Season it with salt & pepper. Roll up the tortilla and cut in half for a portable meal that is easy to eat on the go. The cream cheese adds a creamy and satisfying texture, while the lettuce, tomatoes and carrots provide crunch and a boost of vitamins. This meal can be put together in 5 minutes, making it a great option for those with busy schedules and limited lunch breaks.
